 SpringformsMany cooks, including Nigella, swear by these while others never use them. Their advantage is the clip on the side which releases a little spring so your cake is freed. They work particularly well for delicate cakes which require minimum handling, for example a wobbly cheesecake. If you line the base the cake will slide off easily onto a serving plate. We now stock an ingenious springform with a glass base that allows you to serve and cut directly on it (the non stick is on the sides where you need it but not on the base!)
