Bannetons are widely used by professional bakers because they guarantee consistent shape and texture, and being made of 100% natural wood fibre, they provide the perfect conditions for proving dough prior to baking. This is because the basket gently shapes the dough as it proves, absorbing moisture from the surface which encourages the formation of a healthy crust during baking. The natural fibres of the basket retain the warmth created by the fermentation process which is vital for an even proving, and the patterned waffle and ridged baskets give the crusts an attractive texture, which ensures bread emerges from the oven with that artisan look!

Using Your Banneton
Dust the Banneton generously with flour before use, and then place the dough in to the Banneton and leave to rise for the required time. Elasticated covers are available to protect your dough whilst it proves. After the required proving time has elapsed simply turn out your dough onto your baking sheet and place straight into your preheated oven to bake.

PLEASE NOTE: Bannetons are only to be used for the fermentation of the dough and for forming the loaves of bread. Never bake your bread in the Banneton.

Cleaning Your Banneton
After use brush the Banneton with a hard brush to remove excess flour and dough. Depending on your usage Bannetons can be sterilized every 4 to 12 weeks by putting it in the oven at 130?c for about 45 minutes. Residual dried flour is much easier to brush off after this treatment, leaving your basket clean and ready for its next use.
