Quiche in Cobham

Here at Art of Living, we have gone a bit quiche crazy over the last couple of weeks!  We have all had a go at making Babette's Tuna & Olive Quiche - if you are yet to try it click here for the recipe - but now the girls in Cobham have gone one step further and tried some different quiche combinations!

 

Linda's Leekraine Quiche (it's actually Jamie Oliver's recipe but Linda really likes it!):

Follow Babette's method for making the pastry.  For the filling you will need:

  • 3 slices of streaky bacon, chopped
  • 3 large eggs
  • 75g cheddar, coarsely grated
  • 250ml milk
  • 1 leek, sautéed
  1. Fry the bacon until golden.
  2. Whisk together the eggs and then stir through the cheese, milk, leeks, bacon and a good pinch of seasoning.
  3. Pour into your pastry case and bake for 25-30 minutes at 180C/Gas Mark 4.
  4. Serve with a mixed green salad.

 

 

 

Gemma's Bacon & Mushroom Quiche:

Again, follow Babette's method for making the pastry.  For the filling you will need:

  • 3 slices of streaky bacon, chopped
  • 4 or 5 mushrooms, chopped
  • 3 large eggs
  • 75g cheddar, coarsely grated
  • 250ml milk
  • 1 red onion, sautéed
  1. Saute the bacon, red onion and mushrooms.
  2. Whisk the eggs and then stir in the milk, cheese, red onion, bacon and mushrooms.
  3. Pour into your pastry case and bake for 25-30 minutes at 180C/Gas Mark 4.
