In an effort to eat healthily, I find I am using my food processor more and more.  My bank holiday weekend was spent trying out recipes from Madeleine Shaw's new cookbook 'Get The Glow' and I used my food processor for every single one of them. My favourite was Fish Burgers & Carrot Slaw - it was really easy to make and tasted delicious."

Madeleine Shaw's Fish Burgers & Carrot Slaw

For the fish burgers:

  • 200g skinless salmon fillet
  • 200g skinless haddock fillet
  • 1 tbsp grated ginger
  • 2 tsp tamari soy sauce
  • 4 tbsp roughly chopped coriander
  • salt and pepper to taste

For the carrot slaw:

  • 2 large carrots, grated (you can use the food processor)
  • juice of 1 lime
  • 1 tbsp olive oil
  • 1 tbsp grated ginger
  • 2 tbsp natural yoghurt
  • 2 tbsp seseame seeds

Chop the fish fillets into chunks and put in your food processor along with the rest of the ingredients to make the burgers.  Mix until the fish is broken down.  Mould into 4 burgers and put in the fridge for 30 minutes.

Mix all the ingredients for the carrot slaw in a bowl.

Once the fish burgers are chilled, put some butter or coconut oil in a large frying pan over a medium/high heat.  Fry the fish burgers for 4 minutes on each side.

Serve with the slaw!
