"I Can't Believe it's Vegan Butter!"

"I have recently been experimenting with Vegan food, because I have an increasing problem with the way animals are treated. However I am definitely still an omnivore and my taste buds do struggle at the thought of "missing out" on so many delicious foods. So I am embarking on a voyage of vegan discovery, to prepare myself for the "Big Jump".

When making my vegan Faux Gras, I discovered that there is such a thing as vegan Butter. However, most of the ones sold in supermarkets use the dreaded Palm Oil.  I tried a few recipes, but this is the one that got the thumbs up from both Jeanne and Em, whom some of you know as chefs at our cookery school. But most importantly,  I like it !

 Utensils:

  • A heavy bottom saucier pan, or a bain-marie
  • A hand held blender with the jug/tall beaker it usually comes with, or a 2Pt Pyrex jug if not, (It also can work in a high speed blender like a Vitamix but it is a bit more difficult to get all the butter out)
  • Ice cube tray or small Lock and Lock containers, or ramekins

Ingredients:

  • 110g of cocoa butter, preferably deodorised
  • 250ml of Rapeseed oil
  • 125ml Soya milk, or almond, original as in Not flavoured and Not unsweetened
  • ½ Tsp lemon juice
  • 1 to 2 tsp of sea salt (depends on your taste/habit)
  • 2g of Sunflower lecithin powder (or 2 tsp of Liquid Sunflower lecithin)
  • ½ Tsp Guar Gum (or Xantham)
  • Pinch of Turmeric (for the colour, but can’t harm!)

Method:

  • Start by melting the Cocoa butter in a bain marie, or in my favourite pan the Demeyere Saucier on a very gentle heat. Cocoa butter often comes in big chunks so if you can slice/shave these in the pan it’ll be faster to melt, but do not worry if not, it'll just take a bit longer
  • Whilst this is happening take a 2 pt Pyrex jug or the tall beaker of a hand held blender and whisk together the milk, lemon juice and salt. (This will start to curdle the milk)
  • Add the guar gum and the Lecithin powder and turmeric to the milk, but resist stirring
  • When the cocoa butter is melted take the pan off the heat and add the rapeseed oil to it
  • Pour the fats onto the milk and immediately start blending. The mixture will solidify quickly and you need to move the stick blender up and down gently a few times until you feel all of the mixture is homogenous.
  • The lecithin and guar gum are emulsifiers that bind liquids and fats together. What you end up with looks like a thick mayonnaise (and indeed you make mayo by putting an egg in the bottom of a beaker then pouring oil on top and the lecithin that is present in egg yolk does the binding under the action of the stick blender)
  • Scoop your mixture in whatever container you choose (small is my suggestion) and put them in the Freezer for 1 hour, this will help solidify.
  • After 1 hour, it will really look like butter and is ready to go in the fridge.
  • If you are not going to use it quickly, keep some frozen.

Notes on the ingredients

-Cocoa butter, I bought online from Real Food Source -  1kg for £10.89

-Guar Gum I get from Shipton Mill - £2.50 for 250g, it will last you a while. It’s made from the Guar Bean. It is a very useful thing to have should you need to make gluten free bread.  You can use Xantham gum instead (see below). Many authors say you can use either or.

-Sunflower Lecithin I got from Special Ingredients . You can also use Soya lecithin.

-They also sell Xantham Gum, if you can’t find Guar Gum

Notes on Other Vegan butters

Most vegan butters sold in the shops use Palm Oil which is why I am interested in making my own. I found a number of other recipes on line , many use Coconut Oil instead of Cocoa butter, which solidifies naturally so there’s no need for lecithin or guar gum.   I tried some because it is easier to source coconut oil and apple vinegar, however... it didn't pass the taste bud test for me. definitely had a taste of  “not like butter”, it was just spreadable fat that would only make me too virtuous to want to become vegan.

The recipe I am sharing with you  here is “almost like butter” , I was rather impressed, this could even make me give up butter!
